Chocolatey Gluten Free Sugarless Vegan Muffins

As most of you know, the recipe that is Hooray Truffles was created by Alanna Kingston and it is through Alanna's extensive knowledge and leadership that much of the vision and mission of Hooray Truffles sprang.

One of things that Alanna has an absolute gift for is vegan, plant based, and gluten free cooking. It is as if she was born knowing the chemical reactions and nature of the new paradigm that occurs with these ingredients. Recipe after recipe turns out great tasting and spectacular.

The challenge is pinning my daughter down long enough to get my hands on one of her recipes but I am happy to say that I have succeeded and this recipe is one that consistently turns out and is moist, chocolatey, sugarfree, and absolutely amazing!

Please give it a try. You will not be disappointed.

Dry Ingredients

1 cup oat flour

1 cup cocoa powder

1 tsp baking soda

1 tsp baking powder

1 tsp sea salt

1/3 dark choc chips

1/4 cup chia seeds

Wet Ingredients

1/2 cup coconut oil

5 bananas

10 dates

1 tbsp vanilla


Blend wet ingredients in vitamix

Add wet ingredients to dry and spread into greased muffin tin

(I used coconut oil to grease)

Bake at 350 degrees 17-20 mins depending on your oven.

Now top these little chocolatey pillows of loveliness with some cashew cream from Eating Vibrantly and a sprinkle of fresh raspberries and you will be transported to heaven.
