Vegan Easter Turtles


With Easter happening in just two days I know I am busy planning a meal for my family and excited about having them here to enjoy their company. SOOO excited.

I thought this a perfect time to post a recipe for a simple, do it yourself chocolate, vegan, fruit sweetened treat just incase you were unable to get your hands on some of our truffles!


These are amazing and simple to make and the recipe of a very creative and inventive vegan friend of mine and food blogger Deb Gleason and.... of course these are made with our alltime favourite favourite sweetner – dates!

Ingredients:

3/4 cup dairy, soy free chocolate (camino is our favourite brand) 12 soft fresh dates (ie Medjool), pitted 1 cup whole pecans 1 Tablespoon vanilla extract

Directions:

Place the dates and vanilla in a bowl and mix together with your hands. You want to soften the dates as the vanilla flavour mixes in. Form 30 small balls about the size of a large marble and then slightly flatten them. These will be your caramel centres. Cut two pecans lengthwise to form the four legs and stick one end of each of them into the caramel centre. Use another small piece of pecan for the turtle head.

Melt the chocolate in a double boiler or very carefully in a small pot over low heat, stirring continuously so it does not burn. Once melted remove from heat. Place a smaller dab of melted chocolate on the bottom of the turtle which will help hold the legs and head in place and then place it bottom side down on a sheet of parchment paper. Put a nice dab of chocolate to cover the top of the turtle. Once all the chocolates are formed place in the fridge to set.
