Blackbean Cupcake Brownies


Hello, Hello Helloooo.

Happy New Year!

What better way to start the year... then with a healthy brownie recipe? This morning I thought I'd put together some Black Bean brownies....


Recipe:

1 - 15 oz. can black beans, rinse and drain

2 flax eggs (1 tbsp ground flax + 2.5 tbsp water = 1 flax egg)

4 tbsp coconut oil

3/4 cup cocoa powder

1/4 tsp sea salt

1 tsp vanilla extract

12 dates

1 1/2 tsp baking powder

Optional topping: Walnuts, Choc. chips... whatever your heart desires :)

Preheat your oven to 350 degrees.

Grease muffin pan with coconut oil.

If you've got a high speed blender - you can add all ingredients to vitamix (or other brand) and blend all together. If the batter seems too thick, add a tbsp or two of water...


Let sit for a few minutes and then spoon into the muffin tin. Top with walnuts or - any topping of choice.


Bake for 25 minutes.

Remove from oven and let sit for about 30-45 minutes before trying to remove from pan! They are dense, fudgy, and moist so use fork and carefully remove when cool.
