Flourless Chocolate Chip Hemp Cookies

Happy Monday everyone!! It is hard to believe that August is almost over.. Where does the time go??

What better way to begin a week then with... COOKIES?! This morning I woke up earlier then I expected and had some time to spare before beginning my day. I decided to do some morning baking. I love baking in the morning, before anyone in the house is awake. It is very peaceful.

I checked my cupboards and fridge this morning and decided to go with a hemp seed cookie.. since I was missing any/all other gluten free baking supplies! I originally was thinking peanut butter hemp... but surprise surprise, I was seriously lacking on the peanut butter so I opted for almond butter instead. Despite the very random ingredients... these cookies are to die for!


Pre heat your oven to 350 degrees :)

Line a cookie sheet with parchment paper

Wet ingredients (can directly measure into high speed blender)

* Be ready with a spatula, this mixture is ULTRA sticky *

1 cup almond butter

10 dates, pitted

1 tsp vanilla

2 organic, free range eggs (for vegan followers, use 2 chia slurries)

Dry ingredients

1 tsp baking soda

1 tsp baking powder

1/2 tsp sea salt

1 cup hemp hearts

1/4 chocolate chips - I use 71% camino choc. chips

Once the wet ingredients are blended, use a spatula to get all of the mixture into your dry ingredient mixing bowl. Be patient... and keep mixing!! It will eventually mix together. The dates, plus almond butter blend together to make an extremely sticky batter, but so delicious. Once all mixed together, spoon cookie size balls onto your parchment-lined cookie sheet. Bake for 10-15 minutes... Enjoy! XO
