Banana Walnut Chocolate Chunk Muffins


Hii everyone! I’ve been working on this recipe – perfecting it before putting it online for everyone to try. I’ve got it! Everyone who has tried so far really enjoys these muffins so I want to share with you guys.

Banana Walnut Chocolate Chunk Muffins

2 cups oat flour 1 tsp baking soda 1 tsp baking powder ½ tsp Himalayan sea salt 1/3 cup chia seeds 1/3 cup hemp hearts 1/3 cup walnuts 1/3 cup Camino 71% chocolate chips

1 cup almond milk 6 dates 3 very ripe bananas 1/3 cup coconut oil 1 tsp vanilla

Blend all wet ingredients together in high speed blender (I use my vitamix)

Add wet ingredients to dry ingredients. Use a large spoon to add batter to lined muffin pan.

Bake at 350 degrees for 25 minutes* *I have now made these muffins in three different ovens and each time varied a bit depending on the oven. Keep your eyes on them the first time baking to be sure. They might need a couple extra minutes or a couple less!
